Grown on our estate this Cabernet Sauvignon wine was produced from hand-picked grapes, slowly fermented in open-top fermenters before being transferred to 225L French oak barriques for two years maturation.

After this delicate handling the wine displays notes of star anise, vanillan leather, cigar box cassis, violets, plum cinnamon and thyme. The wine is a perfect accompanyment to pizza, hearty gamey dishes and seared meats.

From our single vineyard outside Limoux, the 2021 Chardonnay was hand-picked from low-yielding, old vines and gently basket pressed. The recovered whole juice underwent barrel fermentation in 228L French oak barriques, followed by malolactic fermentation and regular batonnage of yeast and bacterial lees. After 24 months of careful barrel maturation, the wine was bottled in-house unfiltered, preserving its purity and complexity.

This delicate, small-batch Chardonnay expresses the essence of its Languedoc terroir. Aromas of guava, star jasmine, and oriental flowers are complemented by hints of sea breeze, citrus rind, and a refreshing, lingering acidity.

The wine was matured on yeast lees in barrel with regular batonnage, enhancing texture and complexity. After eight months of careful ageing, it was bottled unfiltered to preserve the full spectrum of natural aromas and flavors.

This expressive rosé reveals notes of cinnamon and raspberry, with a soft strawberry and cream mouthfeel that lingers elegantly on the palate. Ideal as an aperitif with canapés or seafood, or simply enjoyed among friends, this wine reflects the spirit and authenticity of hand crafted ‘artisanal’ wine.

Hand-picked at optimal ripeness, the grapes were softly pressed and the juice was gently fermented to retain all natural flavors and aromas.

Our 2021 Syrah is crafted from 100% hand-picked grapes from two low-yielding vineyards in the Pyrénées-Orientales. Vinified in traditional open-top fermenters, approximately 30% of the bunches were left whole to enhance perfume through carbonic maceration and add depth to the wine. After two weeks on skins, the must was basket-pressed and matured in seasoned French oak barriques, completing malolactic fermentation before 30 months of careful barrel ageing. The wine was bottled unfiltered to preserve its natural aromas, structure, and complexity.

This expressive Syrah reveals intense aromas of the garrigue, with notes of thyme, rosemary, and fennel, complemented by subtle hints of black wild cherries, freshly ground pepper, cinnamon, and cardamom. Rich, layered, and elegantly structured, it embodies the terroir and meticulous craftsmanship of our organic Languedoc vineyards.
